Sourdough Bread !


Making a Conscious Choice For Your Family

It takes me a while to find bread with an ingredient list I am comfortable buying. Have you ever looked at all the ingredients on the standard loaf of bread on the supermarket shelves. Oh My! What is all that stuff.? It would take me all day to google all those items.

I have found two or three companies that keep it simple.

But recently, I started reading articles on the greatness of sourdough bread! That would be great if this stuff is a good option, because it is delicious!.

But then I found that you can find a lot of sourdough bread with all that extra "STUFF" in it.

UUGH!

No thanks.

So now I am on a hunt for the idea/recipe/ambition of just making it.

If you are buying bread, look at the ingredients. If there is more than the essential ingredients, there is a better option for you out there.

And giving up a sandwich for your picnic is just very hard to do.

Spouted 7 grain bread,

and it was reasonably priced. They haven't had it lately at the store I go to , but maybe it is at others.

(Update: They started making this bread into a wrap, that is DELISIOUS!!)

I read about the sprouted idea and found that the enzymes produced from the sprouting process are lost during baking. However, the sprouting of the grains make it easier for the body to digest them.

That's a long list of chemicals !!

Well, I checked out a local bakery and purchased their sour dough bread. However, they were unable to give me an ingredient list. They did tell me that they used "bleached" flour. SO the search is still on.

I found this loaf yesterday at Woodmans.

The ingredient list just says "flour". ?? IDK

I tried looking on their website but found no ingredient lists, or even a picture that resembled the loaf I found.

Whole Wheat Sour Dough Recipe

Well... after a good sourdough talk with another enthusiast, at the playground, I became highly motivated to start the adventure.

I started one Oat flour and one plain white flour (it was in the pantry); clearly I have guilt with this bleached and enriched starter. However, it is giving me experience at a very low cost.

It is day 7 today and I am not sure what the outcome is on the yeast collection needed to rise a loaf of bread. I watched a video that said to place some of the starter in water and if it sinks, it's not ready. If it floats, it's ready.

They both sink???

Anyways, I got anxious to start, and the bowls where filling up with starter, so I started using it. I searched and searched and could not find what I wanted. Maybe it doesn't exist??

So I started making other things, like crispy tortillas and buckwheat raisin bread.

They turned out rather well I thought!

Tortillas

I just used the started and some oil/butter in a pan. Heated for about 10 mins each side, on med/low, then placed them on a cookie sheet and baked at 350 for 20 mins. They were nice a crispy, and delicious with sautéed mushrooms and nutritional yeast on them. (+ Himalayan salt!!)

Buckwheat Raisin Bread


3/4 Cup Oat Starter

1/2 Cup Water

1 1/4 Cups Buckwheat Flour


Rest for 6 hours ( IDK if this was necessary)


1/4 Cup Ground Flax Seed mixed with....

1/4 Cup Water ....Let sit till gooey

1/2 TB Cinnamon

1/2 tsp Baking soda

1/2 tsp Himalayan Salt

1/4 Cup Raw Honey

1 1/2 Cups Oats


Raisins


Baked at 350 for 50 mins.
